When a green olive turns black in color it is completely ripe and ready to preserve.

A basketful of green and black olives is separated into green olives that are stuffed with pimento are sold, and the black olives are often preserved in vinegar.

In Europe the Olive trees can be shook when the black olive color appears and the ripe olives will fall onto nets where they are cleaned and soaked in brine.
